Super easy AND super delicious.
- Medium sized onion
- 2-3 cloves garlic, or 3-4 garlic scapes
- ¼ – ½ lb. of greens (broccoli raab, mustard greens, kale (with ribs removed), and/or other cook-able greens)
- 1 Tbsp. butter
- Salt and pepper
- Lemon juice
- Grated parmesan
Dice the onion and sweat with butter over medium heat. Season with salt and pepper to taste. When the onion has softened, add the garlic and cook for a minute or so. Chop the greens roughly and add to the pan. If using sauté mix, cook just until the greens have wilted (1-2 minutes). If using kale mix or other hardy green, cook until the greens are tender (5-10 minutes). Add a dash of lemon juice just before removing from heat. Serve with grated parmesan cheese on top.
